From what I understand, all versions have the same games and can have the menu language in English or Japanese. All versions have the US NES Double Dragon Trilogy, Crash N the Boys, Super Dodge Ball, River City Ransom and Renegade. Those games are the same no matter what. They all also have 11 Famicom games. In the Japanese/ Asian version, these are in Japanese, as expected. Now for the American version, which is digital only and called "Double Dragon and Kunio Kun: Retro Brawler Bundle", they actually went all out and created new translations for all 11 Famicom games, even if they already had an NES version.

But I'm pretty sure you have to buy both versions if you want the Japanese and translated versions, much like Spellunker Party and Collection of Mana.

Despite the current mess with Gamestop, I was still able to receive my RE3 remake collector's edition.  It's very similar in quality to the RE2 variant last year, although admittedly this statue isn't quite as good, and the map feels like a lot cheaper paper.  Either way, I'm glad to have this, 
I also bought the PS4 variant for my friend's upcoming b-day.  But  decided to get that from Best Buy so I could get the steelbook for myself.   ;D

I don't have nearly as much nostalgic attachment to RE3 as I do to RE2, so I didn't pre-order it.  I still plan to get it and play it, but probably after the price comes down a little.

I'm with you on the nostalgia factor.  3 was my least favorite of the original 4 games (1-3, CV).  But I really loved the statue and item box from RE2 and this is just more of the same.  And I like the game enough to warrant a preorder....but I am looking forward to a likely Code Veronica remake far more than this.
