They sure do!  They made one for the 2600 with a tan ball, and the 7800 looks nearly identical with a black ball.  They both have "analog" and "digital" modes.  Many games weren't programmed for analog play (proper arcade feel) and so can be simulated on the digital setting.  However many awesome programmers are adding analog track ball support now and re-releasing these games as "trackball editions" which I find mostly in the AA store.
