But maybe best option is RGB + RGB to HDMI converter? |

no! the straight forward option is, as above you stated. (R.G.B./Y.U.V./scart/peritel) oh, i got it wrong about the saturn socket, the pin outs are the same as MD-mkII, but it's shape is slightly different, offset. so, in the end, no.
