I know composite is worse than S-video, but quick check on Wikipedia said RGB, composite and RF, no word about S-video, so I suggested composite instead of RF as usually in this case composite wins.
But maybe best option is RGB + RGB to HDMI converter?

the straight forward option is, as above you stated. (R.G.B./Y.U.V./scart/peritel)
oh, i got it wrong about the saturn socket, the pin outs are the same as MD-mkII, but it's shape is slightly different, offset.
so, in the end, no. (unless you go DIY and custom?)

of course, if the tube/av in socket can't take it's beer for Y.U.V. then expensive and convoluted equipment will be required. :P
