No, not a 360, an XBOX!
I have Project Gotham Racing 2 and Splinter Cell... for certain reasons involving softmodding and XBOX Media Center... Besides the obvious emulation capabilities, are there any games people recommend that I play? (No, I don't have Halo/Halo 2. I don't really care. Are they worth picking up? On the few occasions I played them at a friends house they didn't seem that great)

Congrats :) Hope you have fun with it.
The Halo games are pretty overrated in my oppinion but they are fun to play and and worth picking up. Halo 2 leaves you with a huge cliffhanger ending though so try to not care about the story :)

It depends on what kind of games you like.
For first person shooters I'd recommend Chronicles Of Riddick - Escape From Butcher Bay. It's one of the best I've ever played.
Star Wars - Republic Commando is also great. It's like a Rainbow Six in the Star Wars universe but with simplified squad mechanics. Pretty much a straight-forward shooter.
If you haven't played the Max Payne games already on PC or PS2  I'd recommend these, too. Doom 3 and Doom 3 - Resurrection of Evil are really good. I'd say if you haven't already played them on PC get them. Same for Return To Castle Wolfenstein. Last but not least, Black, it's awesome.

For RPGs the two Star Wars Knights Of The Old Republic games are among the best. Deus Ex: Invisible War is a mix of FPS and RPG and pretty good. Indigo Prophecy and Oddworld: Strangers Wrath are more like Adventure/Action-Adventure games but I'd recommend them without hesitation.

For Fighting I'd recommend Soul Calibur II, Dead Or Alive 3 and if you're more into 2D fighters King Of Fighters Neowave, Capcom Vs SNK 2 EO and Guilty Gear X2 #Reload. The latter is a bit on the hard side though. The Warriors is great and deserves more praise than it actually got. It's basically a 3D Final Fight but has a great atmosphere sound and story.

Lastly for straight action games there's one to rule them all Ninja Gaiden Black. It's insanely hard on the higher difficulties but when you beat it you feel like you've accomplished something groundbreaking :D

Oh, and seeing that you came to like Metal Gear Solid lately, there is Metal Gear Solid 2: Substance

yeah, i agree with kaiser, doom 3, ninja gaiden black, star wars republic commando, black, and indigo prophecy are great games. i'd also suggest half life 2, cause thats a really good game.

seriously though its $2 at gamestop, its worth it   ;D

if you can find it Death Throw is a good one too, its extreme ultimate frisbee.
i got it at gamestop for $5.

It's a mix. You can use first person for the weapons, but the whole game isn't first person. Anyway, I recommend Fable: The Lost Chapters. It's one of my personal faves. Oh, and on the platformer front there's Psychonauts and Voodoo Vince. Then, if you like racing sims, like Gran Turismo, I'd definitely take a look at Forza Motorsport. If you where a Shenmue fan then there's always Shenmue II. There's also The Elder Scrolls III: Morrowind. Other than that, I think Kaiser covered everything.

Kingdom under Fire 1 and 2 are pretty nice games too....

A yes and Evil Dead: Regeneration is a must have if you love the Evil Dead stuff as I do....

Holy crap, people actually read what I write... and respond? This is madness! Thanks especially to KaiserWAVE. :)

Panzer Dragoon Orta doesn't look that great. The only rail shooter I love is The Typing of the Dead.

Riddick looks good. Does it have multiplayer? That's what I care about. I have too many single player games as it is. And if it does, how does it stack up against the universally acclaimed Halo [2]?
The friend I bought the XBOX from has Doom 3. I might be able to get him to part with it for $1 or so.
Is Black multiplayer?
I've heard great things about KoTOR. But it's an RPG and those suck my time like no other...
For fighting I think I'll roll with Super Smash Bros. N64. ;)
Someone gifted me Ninja Gaiden 2 NES on Wii, and I hate them for it. I got to the second level I think.
Already got MGS2 as part of the Essential Collection.

Riddick and Black don't have multiplayer, they're pure single player games. But you should really give Riddick a chance, it's highly addictive and sucks you right in. I think I beat it in just two sittings because I just couldn't stop.
Black is more of an arcade shooter. Run and Gun all the way, with enemy fire and explosions everywhere :) On higher difficulties there's still some tactic involved butit's nowhere near complex.

If you're looking for multiplayer maybe you should check out Unreal Championship 1 and 2. Never played Halo 2 in multiplayer but people were still playing it over all these years up until the release of Halo 3. I guess that means it must be good :)

Evil Dead Regeneration is more like a third person shooter action game than survival horror.

My XBOX now has a few new capabilities... ;) I'm gonna upgrade the Hard Drive and then I can store all of my games (XBOX or otherwise) on the HD. Faster load times and I don't have to worry about the shitty disc conditions of my used games as long as the XBOX can read them once.

Here's my current collection:
various emulators
StepMania, DDR clone
Doom 3
PGR2 - SO SCRATCHED IT DOESN'T PLAY!
Splinter Cell
S.W.A.T (my friend that sold the XB to me gave it to me for free because it sucked so bad)

Not bothering with XBMC until I get a new HD. And now details! Super Smash Bros., Mario Kart 64 and Goldeneye are gonna get some more playtime without crappy N64 controllers! In the SNES department, I <3 Super Mario All Stars, Super Mario World, Zelda LttP, and some great RPGs for good measure. (SMRPG, Chrono Trigger, and FFIII aka FFVI) Also have a bunch of NES and a few GEN/PS1.

I love my XBOX. I love it so much.

They make great media players. We have three networked in the house for just that purpose. They play almost any video type you can throw at them. MAMEoX is a nice emulator if you dont stress it too much, as is Kawa-X. And NeoGenesis is the only way i can get my import of Lunar to play at all. As i have a PAL Mega CD, i have to use a Megacart to play NTSC games and this particular one reads the Megacart as a backup RAM and hangs at the title page. But its A-OK with the XBOX. ;D

I also have a modded XBOX. Replaced the orginial 8 gig HDD for a 200gig and have all my games on it. Don't use it as a media center since I have a HTPC and a laptop. Just know that you can't install every game on the HDD  :'( I can't start Riddick without the disc, maybe there's a patch for this but I didn't bother looking for it. Why would I, I own the freakig disc :D

On my modded xbox I found some games wouldn't start unless I picked a different Launcher for them in the games menu. I was running XBMC as the frontend simply for the UI.
