SFC/US SNES run on 110v right? Wouldn't the EU 230v power supply fry the thing?

You mean Super Famicom?It has same problem as PAL SNES: in order to fit US carts in it you'll need to widen the cart slot which in my honest opinion looks stupid.US SNES with the wide cart slot does not have this problem, hence I suggest that as the base.For US SNES to play JAP games you just need to cut 2 tabs inside the cart slot which can be done even without opening the SNES, but to be on safe side I'd recommend opening the the SNEES for the mod.I don't know does UK power adapter physically fit in the JAP Super Famicom, but the voltage is correct.
OK, in that case total cost wise getting Super Famicom and power cable to it will be cheaper than modding.But space wise and for convinience mod switch is better.Up to you.Or like Matti Nykänen (best skii jumper ever) said: it's up yours.

...I'd mainly want a mod for playing SFC carts. I can always fit US carts into a EU shell if I really wanted to play them. US carts are ugly anyways
