I downloaded some cover art from this site for my Wii games but I'm a little confused. I read that the standard NTSC US DVD dimensions are 3225 x 2156 but the Wii cover art is slightly different at 3240 x 2175.

All the Wii cover art I downloaded from this site is 3225 x 2156. Will that work?

Also, when I was trying to resize the cover art, using windows photo viewer, from 3225 x 2156 to 3240 x 2175 it kept changing it to 3240 x 2166. It would not let me use 2175.

I then tried using GIMP and it was doing the same but only backwards. When I adjusted to 3240 x 2175 it kept changing them to 3253 x 2175.

Any help would be much appreciated.

Wii cover art is standard DVD so you don't need to resize it. Official gamecube cases however are marginally different. You should never have to resize artwork found on this site. It should fit the case it was designed for. We painstakingly screen all the covers that are submitted before they go up on the website to ensure that.

In photoshop when you try to resize, there is a box you have to uncheck which keeps the original aspect.
i.e. when you change either the x or the y it adjusts the other value for you automatically. You have to uncheck this if you want to change each value independently.
The covers on this site should print to the correct size without modification. However, I find that the GBA covers are not wide enough and leave an unsightly gap on my case, so I usually stretch them a little.

I've found more than a few covers on this site that are at least slightly off.  A lof of them seem to be in fact 3240 x 2175 and I even have a few that are 2000 x 1340.
