That might be a bit much for the scanner (almost the same at half the price http://www.amazon.com/Canon-4508B002-CanoScan-LiDE210-Scanner/dp/B003VQR1TS/ref=sr_1_2?ie=UTF8&qid=1389584152&sr=8-2&keywords=CanoScan+LiDE). Great price on the printer tho, but before you buy check how much the ink refills will cost you.

Im willing to spend a little more on the scanner, i have at least 100 boxes that arent on the site yet. thats a low estimate
Considering im on my 4th box of 100 UGC's, ensuring i get the best possible scan is literally the least i could do in return.

Just remember:

Alonside moire removal it's important to get the box straight (turning it in imageediting programs degrade the quality), get the boxes absolutely flat (Even slightest distance between the glass and box creates blurriness) and 60DPI (so artist have leeway).

As an FYI, downsampling, versus scanning at the resultion which will be used for production, also degrades quality/sheds data.  Really everyone should be scanning at 300dpi if that's what they're gonna print in. When you downsample an image the software has to make a guess as to which pixels it will remove in order to reduce the size.   Software like Photoshop will do the job as well as could ever be expected, but it's not perfect and really just a waste of time and digital space to scan these boxes at 600dpi.  Just my .02 on the subject.

Admins/guru's, would the quality of the new scan be usable? with a little fixing

Probably yes.

Boxes with humen people on them are nightmare to scan, so I'd say that is as good as it can be.
