The list would honestly go on and on. But it would entail

Final Fantasy 6 through 9.
The Legend of Dragoon
Parasite Eve
Crash Bandicoot
Spyro

Legend of Zelda 1 & 2 + BS Zeldas with Link to the past graphics but in way higher resolution.

Or better yet those + all 2D zeldas (not the CD-I ones) ported in to Wind Waker HD engine... maybe even expanded...

Wouldn't mind a nice Suikoden Compilation....even if it isn't upscaled and smoothed out.

 Everyone who likes FFVII wants a remake, HD or from the ground up.

 I'd also like whoever owns the rights to the wonderful Working Designs RPGs to re-release them as well. Again, HD or not.

Are we talking about HD upscaling or completely remade games? A lot of people are naming 16 bit titles that would require a game remade from scratch, esentially being a new game, rather than just getting HD status. If that's what we're talking about then I could make a dream list a mile long.

Secret of Mana would be fantastic in HD.

I was recently playing Metroid Prime (which does not support 16x9 aspect ratio), it would also be a great HD candidate.
In the same line, Super Metroid.

I kinda liked 7 also, 8 was crap. 9 might be nice (started but played nly 1 hour, then forgot to continue ), after that Haven't played.
