Actually, I wasn't a huge PlayStation fan, with the exception of two games: Castlevania Symphony and Resident Evil 2. After beating them both many times, I gave up, and quit. Growing up, I was always more into Nintendo products, but overall, the N64 was pretty disappointing. The main reason I have one is for the two games I mentioned earlier; besides, all the later ports for "Ocarina" are censored.

Some I remember off hand was changing the color of blood from red to green (in relation to Ganon at least)
The well level had some changes with the bloody walls or something?
and the music in the fire temple was changed.
There were a couple other changes due to some religious ties I believe

Fucking weak. I was pissed when they altered Link to the Past for the GBA, making it useless to play level 6 before 5 among other things. That change didn't even make sense. It just "fixed" a non problem with the game. It's like Lucas and Star Wars. JUST LEAVE IT ALONE, Nintendo!

"Censored" is a little strong. They changed the blood from red to green on Ganon, and I believe most of the blood in the Shadow Temple is still there. In fact, some of it is even still red.
The music is the Fire Temple was changed mutually - Eastern audiences didn't like the idea of their religious music being used in a video game, especially in a dungeon. It was also said that it makes Western audiences uncomfortable (not me personally).
The last thing that was "censored" was the Moon and Star symbol, because it was seen as being disrespectful to Islamic people to have Link stepping on the symbol that was so similar to the one of their religion every 5 minutes. Which I think is definitely fair enough. EDIT: I forgot to add that this revision is only in the Gamecube and Virtual Console versions. All three cartridge versions still have it.
So the game wasn't really all that censored - maybe altered to better suit religious sensitivity.
