Definitely appreciate the scans mate, and I'd love to get working on them, but there's still a bit of blurring on then that I wouldn't be able to work out.  Like vlad said, laying them flat and putting something heavy on them is a good way to go, but to get really flat scans, which are what make the best covers, you'll need to put a significant amount of weight on them in addition to the books.  What I do is lay them flat the scanner bed, take a small hardback book (ideally you should have one that's about the size of the box itself, and certainly not large enough to touch the sides of the platen), and while the cover is scanning I cross my arms and physically lean on them, putting my upper body weight on top of the book.  This gives it enough weight to make sure there are no bends in the middle and also eliminates nearly all blurring on the creases near the spine, and since it's a hardback book it puts even weight distribution throughout the whole box.  What you'll end up with is nice clean, flat, sharp scans which, in turn, can make nice clean, sharp-looking covers.

I know it's asking quite a bit, but if you could re-scan with the above method, or something functionally similar, it would produce the perfect scans I need to be able to make covers for them.  And thanks again for all your contributions! :)

Sure, I don't want to scan them again, but, when I viewed RT in a browser, I did see the blurring.   So, after I drink some coffee, I'll be rescanning all three.  :)  Least I can do.

Yes!  Much better!  There's still a slight amount of blurring on the left side, however.  Check out the difference in clarity on the 'E' and the 'A':



This is caused because of the crease in the spine when the box is laid flat, and sometimes there's nothing you can really do about it (especially if the box is made of thicker cardboard).  The only way around this is to flip the box (so that it's showing the front and the right-hand spine) and scan the front again, which would likely put the blurring on the other side and would allow me to take both images and make a composite to eliminate the blurring on both sides.  It's not ideal, but it's a workable solution that will still produce a great cover for those uncooperative boxes that just refuse to lay flat. :)
