You need a upscaler like the one talked about here:

I have never used one,  but I remember a couple of people talking about them here before.  I think grumbleduke, and maybe tiktektak - but I could be wrong.

Edit:  this one sounds like the mutts nuts!  Not sure on pricing - but guessing expensive!

I live in the USA, I think that is only available in the UK, and Amazon of UK will not allow sellers to ship to the US  :(

There is an issue with that device, it doesn't input composite, just CGA through VGA

Ok, I found a solution, a little expensive but it should work out.

It accepts SCART and up scales to 1080p, since SCART wasn't really used by us yanks, I doubt anyone would have a scart cable for any of their systems, so you would want one of those. For Nintendo systems Gamecube and below, you need a gamecube scart cable as SNES and N64 Scart cables are wired weird and wont work right on US SNES and N64 systems.

if you don't want to get specific cables, you can get an AV to SCART adapter for much cheaper but I bet the quality won't be as good.

I have no idea what any of that means.  All I want is one device that I can plug all of my systems into, and have a cord go to the TV.  I don't know what scart is and all that jazz.  All my systems have composite cables.  I need to be able to plug those into the upscaler and then have a cord from the upscaler go to the tv.

I cant find an upscaler that goes straight AV to VGA or HDMI, you need to deal with scart, luckilly there exist AV to Scart.

Scart is a common interface used in the UK and other PAL regions in lieu of Composite. SCART offers a superior quality compared to Standard AV.
